Grand Casino Beograd is looking for candidate willing to take position of

EXECUTIVE CHEF DE CUISINE


Main tasks and responsibilities

  • Directly responsible for functioning of all cuisines in Grand Casino Beograd, including food procurement, preparation and maintenance of quality standards
  • Responsible for health safety and cleanliness
  • Monitors staff training in cooking methods, preparation and presentation of food, controlling portion size and cost, health safety and cleanliness
  • Excellent knowledge of all recipes and portion standards in all kitchens
  • Solves equipment and food quality problems
  • Solves lack of food supplies problems together with Purchasing Manager
  • Responsible for regular operating of all kitchens in Grand Casino Beograd
  • Responsible for quality and standards of prepared meals in the kitchens


Requirements

  • Minimum high school in culinary
  • Minimum 10 years of experience in varied kitchen positions including food preparation, line cook, fry cook and expediter
  • Minimum 5 years of experience in similar jobs, which includes full responsibility for kitchen operations
  • Good knowledge of English language
  • Good computer skills (MS Office)
  • Materials Control
  • Knowledge, operation and hygienic maintenance of equipment and techniques in the kitchen
  • Has reasonable knowledge and is able to understand the legal aspects within the Hotel & Catering industry e.g. Food Hygiene, safe working conditions, Fire Licensing, Employment and wages, etc.
  • Create courteous, friendly, professional work environment
  • High standards of personal presentation and appearance
  • Position is required to work a varied schedule that may include evenings, nights, and week-ends


Abilities

  • Ability to communicate clearly with managers and kitchen personnel
  • Psycho-physical and medical capability for work in the kitchen
  • Ability to manage staff professionally and to establish good communication and relationships with employees in his department and beyond
  • Experience in training and developing employees with limited education/experience
  • Demonstrates assertiveness to instruct, firmly represent organizational standards and goals, or discipline as necessary
