A Belgrade-based hotel management company is looking for an:

Executive Chef

for Viceroy Kopaonik, the first 5-star mountain resort in Serbia

General purpose of the job:

  • Responsible for directing and administering the planning, preparation, production and control of all culinary operations in the hotel's continuing effort to deliver outstanding guest service and financial profitability

Place of work:

  • This role will start in our pre-opening office in Belgrade until the hotel opens. Onwards it will be based full-time in Kopaonik

Responsible to:

  • General Manager

Essential Duties:

  • Direct and oversee all culinary operations, to include, but not limited to, production of all hotel meals, food quality and presentation, compliance with all safety and sanitation standards and regulations, team member productivity and performance, implementation of policies and procedures, cost controls and overall profitability.
  • Create and implement new menus and individual menu items for outlets based on current food trends and regional tastes in partnership with the Director of Food and Beverage.
  • Manage the overall creation of menus, preparation instructions, and individual dish specifications by ingredients and corresponding portion sizes.
  • Strategically analyse business performance to facilitate accurate and meaningful forecasting, involving the respective Heads of Department as appropriate.
  • Maximise employee productivity through the use of multi-skilling, multi-tasking and flexible scheduling to meet the financial goals of the business as well as the expectations of the guests.

Requirements:

  • Minimum two years of experience as an Executive Chef or an Executive Sous Chef in larger operation of a four- or five-star hotel
  • A flair for creativity and experience in the process of creating and implementing successful new concepts
  • Strong leadership skills
  • Excellent organisational and planning skills
  • Relevant degree in food production
  • Fluency in both written and spoken Serbian and English
  • Pre-opening Hotel experience is advantageous
