Position: FOOD AND BEVERAGE MANAGER  

Scope of job: FOOD AND BEVERAGE DEPARTMENT

The Food and Beverage Manager is responsible for ensuring guests and associates satisfaction by maintaining high service standards established by the Hotel for all Food and Beverage (F&B) operations.

Main Duties and responsibilities:

  • Organize, direct and evaluate food and beverage service
  • Recruitment and training of staff
  • Shift scheduling
  • Performance management; monitor staff performance and provide feedback
  • Purchase and control of inventory
  • Maximize Food and Beverage Revenue
  • Ensure Exceptional Customer Service
  • Monitor revenues and expenses
  • Manage quality offerings and services to consistently deliver memorable F&B experiences for all guests
  • Promote high levels of guest satisfaction through consistent execution of brand standards
  • Maintain high standards of operations in the Hotel's restaurants, bar and banquet events
  • Implement F&B’s annual business plan and medium-term strategies
  • Implement department’s annual and monthly promotions calendar
  • Ensure that levels of cleanliness and hygiene are in accordance with local laws and brand standards 
  • Managing food & beverage costs, upholding menu standards and controlling inventory with the assistance of the Executive Chef.
  • To be involved with all outlets operations, day-to-day functions, including associate management, guest interactions, office administration duties, vendor communications and labor costs.
  • Clearly describing, assigning and delegating responsibility
  • Managing the staff canteen, marketplace, and room service is an integral part of managerial duties within operations.
  • Planning and administering a learning and development program within the department which will provide well-trained associates at all levels and permit advancement for those persons qualified and interested in career development.
  • Ensuring familiarization with local food hygiene and HACCP guidelines as per the requirements from the local Health Authorities.
  • Working varying schedules to reflect the business needs of the hotel due to the cyclical nature of the hospitality industry.
  • Attending all scheduled training sessions and meetings as and when required.
  • Attend daily operations meetings with the F&B team to plan for immediate operational demands, manage daily operational challenges, and follow up on personal tasks and projects
  • Establish a well-organized F&B store, maintaining close control on the consumption of material, stores, and inventory control to drive profitability
  • Establish a rapport with guests maintaining good guests' relationships and handle all guests' complaints, requests and enquiries on food, beverage and service
  • Conduct frequent and thorough inspections together with the Executive Chef of the Food and Beverage Operation to ensure the maintenance of hygiene standard with quality delivery
  • Prepare and regularly update F&B department budget, in close cooperation with the head of F&B and finance ensuring targets are met and costs are effectively controlled
  • Comply with all relevant Workplace Safety & Health practices and maintains a safe workplace for all Associates.

Qualifications:

  • Bachelor's degree in hospitality management or related field
  • At least 5 years of experience in food and beverage management
  • Resort experience is advantage 
  • Knowledge of food and beverage safety and sanitation regulations
  • Excellent customer service and communication skills
  • Proven ability to work independently and as part of a team
  • Strong organizational, problem-solving, and leadership skills
  • Proficient in Microsoft Office Suite and other relevant software
