COMMIS DE CUISINE

Purpose

To perform food production duties within the kitchen fulfilling Dufry performance standards and Dufry International Guest Expectation Standards.

Key Accountabilities

Broad Responsibilities

• To maintain guest service standards which meet the needs of the target market in line with Dufry standards and the operating concept of the Food & Beverage facility
• To ensure standard recipe preparation and presentation is maintained at all times in order to achieve highest guest satisfaction
• To liase with the Chef de Parties on day-to-day operational requirements
• To maintain Dufry standard of personal appearance and personal hygiene at all times
• To ensure that all prepared dishes are issued with the corresponding Executive chef Order
• To have a complete understanding and adhere to Restaurants policy relating to Fire, Hygiene, Health and Safety

Merchandising and Maintenance

• To take the necessary actions to reduce waste and other cost effective measures as appropriate
• To ensure the highest standard of cleanliness
• To ensure that storage areas and fridges are in clean and tidy condition and properly secured
•  To ensure that restaurant buffets and set-ups are properly maintained

Operations

• To have complete knowledge of current food menus in the outlet
• To perform show cooking as required.
• To have a flexible attitude with regard to work in shifts and areas (location) of work

Requirements

• Minimum III level degree
• Relevant previous work experience minimum of 1 year
• Fluent English
